cake in a cup?

I don't know if I should be excited or a little worried that this recipe is now in my repertoire


4 tablespoons flour

4 tablespoons sugar

2 tablespoons cocoa

1 egg

3 tablespoons milk

3 tablespoons oil

3 tablespoons chocolate chips (optional)

A small splash of vanilla extract

1 large coffee mug (MicroSafe)

Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well..
Add the chocolate chips (if using) and vanilla extract, and mix again. Put your mug in the microwave and cook for 3 minutes at 1000 watts

I added a small pinch of salt and reduced the oil to 2 tablespoons... you know, to make myself feel a little better about eating this for lunch today.

I have to be honest, it was a tad rubbery, but what do you expect from microwave cooking and 5 minutes?

Dad says that looks interesting. There's a low-fat, low-carb version on Recipezaar, recipe # 322448 that I'm gonna try for him.

and you call yourself an artichoke lady?! my mom actually passed this along to me a while ago and i have yet to try it. good to know it's got your stamp of approval. btw, congrats on the pregnancy. hooray!
